Off-Topic Fridays: What’s Your Go-To Comfort Food?

Happy Friday! I know we’ve discussed comfort TV before, but I have lunch on the mind, so this week’s question is:

What’s your go-to comfort food?

My ultimate comfort meal is this spicy bean and sausage stew. It’s so easy to make and I’ll never be sick of it!

Nobody asked but here’s the recipe anyway lol

Serves 2 (large portions)
Fry onions & garlic
Add 2 tins chopped tomatoes, 1 tin kidney beans, 1 tin cannellini beans
Add 2 Tsp cumin, 2 Tsp paprika, chilli flakes, salt + pepper
Cook for 10 minutes
Add 6 sausages (I like the Linda McCartney ones. Inb4 “I can’t believe they haven’t run out of bits of Linda McCartney to put in the sausages”)
Transfer to oven & cook for 45 minutes
Serve with garlic bread

Semi-recent development for me but a couple of months ago I got hold of a quick and dirty Quesadilla-type recipe and honestly? It’s surprisingly great. If you want the rundown:

  • Heat the oven up
  • Brown off any meat mince (the beef one you’ve had in the freezer for 6 months that you were definitely going to use will do) in a pan with some tomato puree/ pasata (any form of vaguely-liquid tomato based product should do) and spices, whatever you want
  • Warm some tortillas up
  • Grate some cheese
  • Put all your prepped stuff in the warm tortilla
  • Stick it in the oven for a bit

Cheap, quick and easy.

Ramen or pierogi.
For ramen almost any type, but preferably beef. With a beer to drink.

Or fried pierogi with meat. And decent red on the side.

With one or the other I feel very comforted.

Ramen is sick, there’s an amazing ramen place up in Cary NC called Noodle Boulevard that’s almost always packed when it’s open. I’ve only really had the Shoyu before, but it’s divine. I’m usually a pretty hungry person, but soups like ramen and pho keep me full for a good long while.

Lately I’ve been making my own green tea at home both to save on money buying Arizona brand tea and because it’s easier. I’m not sure I’ve got the mixing quite right yet, the flavor seems to not be the same throughout the whole pitcher, but it’s pretty good.

I eat a Pizza almost every Day since 15+ years. I must’ve eaten at least 4.000+ Pizzas in my Life so far and not planning to stop
