Currently, there’s no way to disable crossplay on Steam.
If you want to avoid Xbox players, you’ll have to look at premade groups. The Darktide discord may be helpful for organising a group.

Shame that Gamepass players also show up with the non-steam icon in game.
Probably can’t differentiate between the two.
Fast way to get banned for that, Best not to do that one

In all seriousness this really should be a feature, especially if consoles can already do so. It’s odd that it would work one way and not the other.
There’s clearly a skill disparity between console and PC. No flame intended, but headshots with veteran is much harder with a joystick, and they lack simple things like a button to flip directions. Even L4D had this mechanic years ago.

The who are you mod allows you to differentiate.
Xbox players show up with their Xbox ID and an Xbox icon.
And so far 100% of the Xbox players I’ve played with performed 50-60% worse than the rest of the team on all aspects: damage, damage taken, objectives, elite/Special kills, basically everything.
No scoreboard where used for that measurement. Made by pure observation.
That one has the highest chance of success of all the options listed.

I haven’t used Who Are You in a long time, but I show up on the post game screen with the Xbox icon (I’m playing on WinPC); does Who Are You show WinPC with another icon now?
You’d be way better served by not worrying about it and just playing the game
It shows steam players with a steam icon, gamepass with a globe and xbox with an xbox icon. It’s been 100% accurate for me so far.
I always confirm people are console players by either bullying or asking them to turn as fast as they can

Ah, okay. Thanks for letting me know! I had remembered the Steam icon from my time using the mod; for me, Steam users have the generic globe icon 
Is this with the base UI / no mods enhancing it? If that’s the case, I must not have played with a single xbox player thus far. I’ve only seen the globe icon + steam

I decided to install Who Are You to see, and I still appear with an Xbox icon 
I saw multiple people in the Mourningstar with the Xbox icon, but I didn’t go quizzing people to confirm.
