Once Darktide is available on XBOX in October, as a Steam player, will I be able to play with my XBOX console friends? I really hope so, plus it would introduce a lot more players across the board to play with.

Yes you can, this was confirmed in the Crossplay FAQ under announcements

The question is: WILL it play? But if it does, you can.
